Caulifower Pizza (Gluten Free)

20140122_171528_resizedThis is so good!  When I made this I thought, Ok I will try it but not expecting it to be something I’d enjoy, what a surprize it is delicious!  I didn’t plan on adding to Blog but  after trying it I knew I had to share this.

Accessories:  Blender Attachment
Quantity: 1    12″ Pizza
Oven Temp:  400 degrees

Ingredients for Crust

  • 1/2 head cauliflower cut into small chunks
  • 1 egg
  • 1 Clove garlic (minced)
  • 1 tsp. Oregano or basil
  • 1 cup grated mozzarella cheese

Pulse the cauliflower in the blender till looks like couscous. Add the remaining ingredients and pulse till well blended or I found it quite thick and mixed together in a bowl. It will be mucky and not stick together well but it works.   Dump onto a mound on the center of a parchment paper lined 12 inch pizza pan and spread out into a thin circle.  Depending on the size of your cauliflower head it may not be enough to go to edged but you do want it fairly thin.  Bake in center of over for 25 – 30 minutes till golden brown.

While this is baking I browned together the ingredients I wanted for topping, in this case I chose not to add any meat but just vegetable pizza.

  • 1 tbsp. olive oil
  • 1 onion
  • 1 green pepper
  • 2 cups mushrooms

You can use store bought pizza sauce but I made mine from:

  • 1 can tomato paste
  • 1 finely diced tomato
  • 2 tbsp. olive oil
  • basil
  • oregano
  • red pepper flakes
  • minced  garlic
  • salt and pepper

Once the Pizza crust is done top with the pizza sauce of your choice, the browned vegys and 1 cup grated mozzarella cheese.  Bake in top third of oven till toppings are hot (5 – 8 minutes). Allow to stand for several minutes to firm crust before serving and enjoy.
